

How to Store Popcorn Kernels
You love popcorn and you bought a bag of really good kernels, like ours, for example, and now you need to store them. But how? Air, heat, cold and excessive moisture can be the enemies of a good popcorn kernel and keep it from popping correctly. Each kernel does need a specific amount of moisture to pop when heated so you don't want it drying out either. To get the fluffiest, most flavorful popcorn, proper storage is essential to avoid stale, chewy, or unpopped kernels
Because popcorn kernels are so susceptible to changes in moisture, the key to any storage option is that it be air tight. However, moisture is still important when we examine how, exactly, a kernel pops. A small drop of water is inside each kernel and, as it heats, the water expands until it turns to steam. Eventually the hull will burst open from the pressure and you'll have popped corn.
Air and humidity are the biggest enemies of popcorn kernels. So, to maintain that perfect environment, the kernels should be stored in a sealed container, away from heat and sunlight. An ideal temperature would be between 60 and 75 degrees F so most pantries and kitchen cupboards should be fine. Do not store them in the refrigerator or freezer because moisture can form in the fridge and freezing can rupture the internal structure of the kernels.

Aesthetic glass jars with wooden tops and sealing rings are a good option for keeping moisture out. Some even come with cute labels so you know which type of kernel is in the jar and when you bought it.
Mason jars, popular in canning, are a great option but be sure they're clean and dry and seal tightly. The French canning jars, with sealing rings and clip tops, also work very well to store kernels.
Weck jars, with sealing rings and clips, are a good choice for creating an air tight environment and also handy to have around for other storage needs.
We admit we love the look of popcorn kernels and love showing them off in pretty jars. But, do you need to go out and buy fancy jars for your popcorn? No, absolutely not. You can thoroughly wash and dry any jar you've got laying around as long as it has a tight fitting lid and you'll have perfect, fluffy popcorn every time you make a batch.
