This easy to make Strawberry Popcorn Bars recipe adds crunchy popcorn with sweet strawberry jam and chocolate – all on a shortbread-type biscuit. It’s a perfect summer dessert – especially if you decide to make strawberry jam from scratch – and a tasty treat to serve any time with a cup of coffee or tea. Best of all, the popcorn on top adds in some healthy whole grains for an after-work or after-school snack.
In a mixer, cream the butter and then slowly – mixing on the low speed – add the confectioners’ sugar, one spoonful at a time. Scrape the bowl down and then slowly add the flour. You may need to scrape the dough down multiple times, until everything is mixed in.
Take the dough and press it into your greased pan, until it is even and flat. Cover the pan in plastic wrap and chill the dough in your refrigerator until the dough is firm.
MAKE YOUR POPCORN

GET READY TO BAKE
Once your dough is well chilled, preheat your oven to 350 degrees F. Take the pan of dough out of the refrigerator and lightly brush the egg white on top of the dough. Put the pan into the oven and bake for about 25 minutes, or until the dough is golden.
Immediately spread your strawberry preserves or jam evenly over the warm biscuit crust, and press the popped popcorn into the preserves. Let this cool.
MAKE YOUR CHOCOLATE DRIZZLE
This step is super easy. You can melt the chocolate chips in a small bowl in the microwave for about 30 to 45 seconds, then CAREFULLY pour the liquid chocolate into a resealable freezer bag. Snip the corner of the bag and drizzle the chocolate over the popcorn covered biscuit.
Let the chocolate cool. Cut your Strawberry Popcorn Bars into small rectangles and serve.
